What do you do when you're so consumed with anxiety that all you want to do is not eat and just sleep?

I have no appetite from worrying so much and I honestly just want to sleep so I don't have to think about it for a while

Yes I have no appetite when I'm anxious. The wanting to sleep all the time sounds more like depression.

I can relate: when Covid first hit, the anxiety was so bad that I just wanted to hide away. I lost weight and depended a lot on the support of my friends (still do). I don’t know, still don’t really know what to do with the feeling; today I’m trying to have a more structured day and it seems to be working. Just had to haul myself out of bed and start with one thing.

This is partly me except sleeping frightens me. The only thing that makes it better is when I start getting better.

I have gone through periods in my life where I am so upset that I can't eat properly for weeks at a time. This is very bad for you and doesn't help the situation. What you need to do is make yourself eat. I'm not talking about force feeding yourself a bunch of pizza or anything, but find some easy carbs and gently introduce them to your stomach (which is probably clenched up like a knot). Make a couple pieces of toast, lightly butter them, and eat them in small pieces with a glass of water. Your body will thank you. An added benefit is that doing something proactive to help you feel better can help reduce your anxiety (or depression if that's an issue).

What you do is seek professional help. There is no need to suffer forever. Anxiety can be overcome with patience and diligently seeking treatment and using self help techniques. Many people overcome anxiety.
